- Grapes are picked at night to protect the juices and each variety was vinified separately. The Marsanne and Viognier went through traditional fermentation in temperature-controlled, stainless steel tanks. The Roussanne was carefully managed through a ‘wild’ primary fermentation and went through secondary, malolactic fermentation in barrel. It remained in these barrels to age for four months.
