The palate is rich and creamy with complex fruit flavours, savory oak and delicate tannin and acidity.Pair with bison stew, grilled striploin with rosemary butter, duck confit.
- The 2012 growing season felt like it had been imported up from California. An extremely early start to the vintage began in April followed by consistently arid and extremely high temperatures through spring and summer. Vines experienced full sun with drought conditions most of the summer. The crucial fall season was nearly perfect with moderate rainfall, warm days and cool nights. Grapes were harvested extremely early in the season with some record breaking sugar levels in some cases. Maybe one of Niagara’s best vintages to date for red wines and also a surprisingly good year for fresh, aromatic whites. 100% QRV Merlot harvested on October 2th 2012 and crushed to one tonne bins. After a two day cold soak, the Merlot began fermentation with manual cap management, the wine was then racked and put into barrel. Malolactic fermentation took place in barrel where it aged for 20 months. After much tasting and deliberation, 8 barrels and one demi-muid made it into this blend. 82% French, 18% American oak. 27% new oak, with some one year old and older barrels. Bottled September 5, 2015.
